Sweet potato, chilli and Actimel soup

Something healthy for lunch... Actimel’s sweetness goes perfectly with sweet potato. So if you’re looking for a super healthy lunchtime warmer, try this easy and super fresh recipe.

  • 2 x 100ml Actimel original
  • 1 x Tbsp of butter (or olive oil)
  • 2 medium sweet potatoes cut into 2 cm cubes
  • 1 x red onion
  • 2 cloves garlic
  • 1 x red chilli
  • 1 litre of water
  • 2 x bay leaves
  • 2 x tbsp tomato puree
  • Crushed black pepper and sea salt

Method

  1. Sweat the onions in a large pan with the butter.
  2. Add the sweet potatoes, garlic and chilli and cook gently for a few minutes until the sweet potato starts to soften (keep stirring to stop it burning and sticking).
  3. Season.
  4. Add the tomato puree and bay leaf.
  5. Add the water and bring to the boil.
  6. Simmer for 20 mins then liquidise.
  7. Pour into bowls and then, just before serving pour in approx ½ pot of Actimel into each bowl.
  8. Season to taste and garnish.
  9. Serve with crusty bread. D-lish.
