Actimel lemon and vanilla no bake cheese cake

Something that’s naughty but nice... Sometimes (but not every day) you deserve a little treat. This is it!

Ingredients

Shopping List

  • 4 x plain hobnobs, crushed
  • 1 x tbsp butter
  • 150 ml whipping cream (or low fat substitute)
  • 200 grammes low fat cream cheese
  • 100 ml pot of vanilla Actimel
  • 1 tbsp caster sugar
  • Zest and juice of 1 lemon

Method

  1. For the base: melt the butter in a pan and add the crushed hobnobs, coating every last crumb with the melted butter.
  2. Place into the bottom of four glasses or ramekins.
  3. For the topping: Whip the cream into peaks and then fold in the cream cheese, caster sugar, Actimel and lemon juice and zest.
  4. Mix well.
  5. Spoon this mixture on top of the bases and put into the fridge for a couple of hours to set (if you can wait).
