Sweet potato, chilli and Actimel soup
Something healthy for lunch... Actimel’s sweetness goes perfectly with sweet potato. So if you’re looking for a healthy lunchtime warmer, try this easy and super fresh recipe.
Ingredients
2 x 100ml Actimel original
1 x Tbsp of butter (or olive oil)
2 x medium sweet potatoes cut into 2cm cubes
1 x red onion
2 x garlic cloves
1 x red chilli
1 x litre of water
2 x bay leaves
2 x tbsp tomato puree
Crushed black pepper and sea salt
Method
- Sweat the onions in a large pan with the butter.
- Add the sweet potatoes, garlic and chilli and cook gently for a few minutes until the sweet potato starts to soften (keep stirring to stop it burning and sticking).
- Season.
- Add the tomato puree and bay leaf, then add the water and bring to the boil.
- Simmer for 20 mins then liquidise.
- Pour into bowls and then, just before serving pour in approx ½ bottle of Actimel into each bowl.
- Season to taste and garnish.
Serve with crusty bread.....D-lish!
Actimel and coffee smoothie
We’ve got a delicious smoothie recipe from this month’s Actimel Lover, Kerridwen Niner. It’s a refreshing creation that comes with an energy kick and a splash of Actimel to boot! Yum.
Ingredients
1 x 100ml Actimel original
1/2 x Tsp of honey
Hot water
A spoonful of coffee
A little milk to taste
Ice is optional!
Method
- Add just enough hot water to a spoonful of coffee to make it dissolve
- Add the honey
- Let the coffee cool down
- Add the Actimel
- Top up with milk as required
- If you're in the mood for a refreshing summer cooler then top up with ice straight from the freezer!
